Overview:
This position will supervise the daily activities of the shift leaders and the employees of the 3 meal‑per‑day restaurant and room
service. They will perform operational duties of the staff as business dictates. They will be responsible for ensuring that the staff
gives quality service in accordance with the Knott's Berry Farm standards. They will ensure that the operations are clean and in
compliance with Knott's Berry Farm and Orange County sanitation standards.
Administrative Duties
Completes, reviews, and takes action to implement appropriate corrective measures to resolve operation concerns to all
daily, weekly, and monthly reports associated with operating a profit center unit including, but not limited, activity and
sales reports, damage and inventory reports, over / shorts, purchase orders, break and meal period violations, and location
schedules.
Communicates department status to the Manager and Director of Food & Beverage daily.
Ensures meal and break periods are taken in accordance with Knott's Berry Farm and California State standards.
Fiscal Duties
Ensures all cash control procedures are followed without deviation to ensure accurate end of day revenue accounting and
provide explanations of related over / short amounts.
Makes daily downward adjustments and recommendations for upward adjustments to labor, ODC, and COG levels
throughout the year to meet cost specific targets.
Maximizes daily planned financial objectives per facility, including total revenue, per cap, cost of goods, labor hours, other
direct costs and contribution including initiating daily adjustments to prime costs to meet business needs and
departmental goals.
General Leadership
Assists in maintaining positive relationships with all other departments.
To maintain effective communication within your team by holding regular briefing sessions and attending hotel meetings
when required; communicates department status to direct report on a daily basis.
Makes independent decisions; supervises direct reports daily work performance.
To lead and motivate associates to create a team environment which promotes great associate morale and ensures a high
level of commitment and pride in the hotel.
Quality Control
Review and act upon guest feedback relevant to assigned areas of responsibility, including concerns and compliments;
visit guest tables and solicit feedback concerning food quality and service.
Implements established safety, security and loss prevention policies and procedures including protecting establishment
and guests by adhering to cash control procedures, alcohol beverage controls, local Health Department standards, and
Knott's Berry Farm procedures and policies.
Monitors dining areas for seating availability, quality in food and service, ensures timely production of all guest amenities,
while assigning tasks; maintains the proper amount of time expediting on pick up line; ensures food is promptly prepared
according to picture perfect presentation standards.
Adheres to and enforces all Cedar Fair and specific Park policies and procedures, including safety, attendance, EEO
policies, and demonstrates commitment to excellent guest service in all aspects of employment.
Staffing, Training, Development
Ensures sufficient staffing levels and complete hiring associates up to the team leader level, as necessary; to carry out
quality planned training and development in a systematic and professional manner in order to meet the needs of the
business and assist in individual associates' personal development and to ensure training is recorded of all associates.
Provides retraining, coaching and counseling regarding associates' performance issues, addresses disciplinary
situations, refers disciplinary issues upward and provides credible and significant input and back up documentation into
discipline, promotion, demotion, and termination decisions.
Ensures employees are properly trained for their assigned positions and / or tasks.
Completes weekly staffing schedules as needed and assign work stations for all front of house restaurant and room
service associates.
Adheres to and enforces all Cedar Fair and specific Park policies and procedures, including safety, attendance and EEO
policies, and demonstrates commitment to customer service in all aspects of employment.
Other duties may be assigned.
This position requires the following education and experience, or an equivalent combination of both:
Education Experience Minimum Age
High School Diploma or GED 1 ‑ 2 Years Related Experience At Least 18 Years of Age
Qualifications:
Basic computer skills including Microsoft Windows, Outlook, Excel, and Word.
Experience with POS system preferred.
At least 1 to 2 years of experience of personnel supervision in Food and Beverage.
Demonstrates strong written and verbal communication skills.
Ability to work nights, weekends and holiday periods to meet business needs.
Ability to pass a mandatory (or random) drug test, per Company policy, unless prohibited by state or provincial law.
Ability to pass a background check, if 18 years of age or older, which may include, but is not limited to, credit, criminal, DMV,
previous employment, education and personal references, per Company policy, unless prohibited by federal, state, or provincial
law.
